
these buttermilk pancakes are a staple for weekend mornings in our house. the recipe is even better if you make them on a well seasoned cast iron griddle.
my favorite buttermilk pancakes

1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 tbs sugar
1 large egg, lightly beaten
1 1/2 c. buttermilk
1/2 teaspoon cinnamon
2 tbs. unsalted butter, melted, plus more for skillet
1 teaspoon vanilla extract
heat cast iron griddle (medium high heat). whisk flour, baking powder, baking soda, salt, cinnamon and sugar in a bowl.
add eggs, buttermilk, butter and vanilla. whisk to combine. don't over mix.

i use a 1/4 measuring cup to ladle the batter onto the griddle.
keep pancakes that are done warm in a 170 degree oven.
serve warm with your favorite syrup.
